Default EVOO and Coconut Oil

Can you use EVOO or coconut oil to bake goodies like cookies, brownies, and cakes? I don't eat that stuff much anymore, but hubby and daughter still like them. I would just like to find a healthier way to make them.

What is the EVOO thingy?

Yes, coconut oil works well for baking and greasing the inside of a baking pan.....great in one's coffee or topically on super dry or injured skin.

There's a site by Maria Emmerich. She has some great recipes for those who are health conscious and or sugar/wheat free. Here's one that the smell alone is worth it, even if you don't eat one.

I have not made them with any frosting (less calories). It calls for coconut oil and Swerve, which is a great low glycemic sugar substitute suitable for baking and everyday use. Especially, if one does not like the "stevia after taste." She sells a lot of stuff on her site, but I have only accessed her blog, for gluten free, sugar free, low carb recipes.

I've never tried extra virgin olive oil for baking, but it might be feasible in a recipe with something like coconut flour which is very dense. And by adjusting the liquid accordingly.
